🍒 Make Cocktail Recipe for Darling's?

Creating/adapting 3 recipes for my friend's resturant

Boat Juice!

Below you can read my plans for drinks I wanted to pitch but in the end, Madi (owner of Darling's) approached me to make a cocktail using liquor she had already ordered for another cocktail that was taking to long to build (aka too slow for a busy bar).

The liquor I needed to use was:

  • Pisco
  • Banana Liqueur
  • Coconut Rum

After many iterations, I sent Madi a recipe, with one small, incredible tweak we co-create Boat Juice.

What's the goal?

Create/adapt 3 cocktail recipes for Darling's to taste with the aim that they take one and add it to their menu.

Drink 1 - New Recipe

  • playing with watermelon juice led to
  • playing with acid adusted watermelon juice led to
  • next I want to play with a saline solution, I love my salted watermelon electrolyte drink from MVMT
    • saline solution recipe
    • update Watermelon Daiquiri with saline solution, 3 drops
    • tried making Watermelon Daiquiri with tequila and mezcal and it was just ok
    • tried making Fruit Season with acid watermelon in place of lemon and it was pretty darn nice

Drink 2 - Finding a great Mai Tai (for my summer too)

  1. Reconstructed mai tai video with The Educated Barfly with Garret Richard - https://www.youtube.com/watch?v=JZUjOS4BaUs&ab_channel=TheEducatedBarfly that builds to Garret Richard's Mai Tai.
    • Wont do: I dont have crushed ice, so we'll have to make do
    • New idea: Spent lime widege swirled around in the glass!
    • New idea: Am I missing lime and lemon oils in my juice because I use a rimmer and not a press??
    • Maybe wont do: Pineapple wedge as garnish
    • Lets get some of the liquors called out in this video

Drink 3 - Cachaça based drink

I wanna bring cachaça to darlings and see if they are into it.

Step 1

Taste these three cocktails:

  • Pencil Thin Mustache

    • this came out wonderfully complex. similar to a jungle bird. perhaps make again with the following adjustments:

    • Adjust: acid adjusted pineapple juice

    • Adjust: Fernet-Branca -> fancy fernet amaro on my self (that Im forgetting the name of)

    • Adjust: spent lime wedge swirled around in the glass

  • Esmeralda

    • this had a little more welcome complexity than caneflower. it came out a little too sweet. and the scotch was a little bit lost. tweak the ratios a bit and this could be better. perhaps batch this for taking to a party
  • Caneflower

    • This was nice, simple, and refreshing. A bit flat. Might prefer a version over rocks with splash of seltzer.
