This recipe came about slowly and interatively, as so many do.
At first, I had leftover watermelon and quickly made a Watermelon Long with it.
Next I remembered I had citric acid in the cupboard and had never used it. So I looked up the concentration of citric acid in watermelon and lemons.
I wanted to make a recipe to share with my friend who's resturant often serves tiki drinks, so I wanted to use this acid adjusted watermelon with rum. Which lead me to a daiquiri. This was a great start!
Months ago, in training for a half marathon I purchased a electrolyte mix that a friend suggested. In the same pack I found my favorite flavor was "salted watermelon". I wanted to bring a hint of that to this drink. So I made a saline solution and added 3 drops to the drink. Love it.
Next, I tried making this with tequila and mezcal and it was just ok. I think the rum is the right choice here.
The next step I want to try is explore if malic acid could add a little deeper dimension to the sour/tartness of the drink.
Im also tempted to garnish with with a sour patch kid...
