🪻 Lilac Simple Syrup

There's an incredible big blooming bunch of Lilacs down at Kingston Point Park each year around Mother's day. I wanted to see if making lilac syrup would be flavorful enough to warrent the work and hold up in a cocktail recipe.

Ingredients

  • 2 cups Lilac flowers (about 4-6 blooming "bunches")
  • 1 cup water (by weight)
  • 1 cup sugar (by weight)

Instructions

  • Pluck lilac flowers from the stem, removing as much green as possible, dont worry about the little green bits that often come at the bottom of each flower
  • Mix water and sugar in a mason jar
  • Add lilac flowers to the mason jar
  • Shake to combine
  • Place in sous vide at 135°F for 45min (over cooking will cause off flavors)

Notes

  • The taste is delicate but there, I hope it holds up in a cocktail. Thinking something like a Ramos Gin Fizz or French 75.
