This variation was created by Brandon Wise for the Imperial Restaurant in Portland, Oregon.

Ingredients

• 1.5 oz rye whiskey
• 1/2 oz Smith & Cross Navy Rum
• 3/4 oz lemon juice
• 1/2 oz Demerara syrup
• 1 egg white
• seltzer
• Garnish: Angostura bitters

Instructions

• Add rye, rum, lemon, syrup and egg into a shaker and dry shake.
• Now and ice and shake again.
• Strain into a Collins glass with fresh ice
• Top with seltzer
• Gently stir, want to keep the foam on top
• Add a few drips of bitters on top of the foam
