🔥 Dry Pot

Ingredients

  • 1 cup dry pot oil
  • 8oz tilapia, cut into 2in pieces
  • 1lb prawns, peeled and deveined
  • 8oz extra firm tofu, pressed and cut into 1in pieces
  • 1 tablespoon chile paste
  • 7 garlic cloves, thinly sliced
  • 4 scallions, thinly sliced
  • 2 red Thai chili pepper, whole
  • 1in piece ginger, peeled and thinly sliced
  • 6 shiitake mushrooms, stemmed and quartered
  • 4 bok choy, roughly chopped
  • 1/2 small napa cabbage, roughly shredded
  • Cilantro leaves for garnish
  • steamed rice, for serving

Instructions

  • Fry tilapia in spice oil and place on paper lined plate
  • Fry prawns in spice oil and place on paper lined plate
  • Fry tofu in spice oil and place on paper lined plate
  • Add chile paste, garlic, scallions, chiles, ginger, and ginger and fry until fragrant, 1min
  • Add mushrooms, bok choy, and cabbage and fry until tender, 3min
  • Add tilapia, prawns, and tofu and fry until heated through, 1min
  • Serve over rice and garnish with cilantro
