🔥 Dry Pot Oil
This is just the recipe for the oil used in dry pot.
- 1 cup vegetable oil
- 2 tablespoons Sichuan peppercorns
- 1 1/2 tablespoons cumin seeds
- 2 teaspoons black cardamom, crushed
- 2 teaspoons fennel seeds
- 2 teaspoons allspice
- 1/2 teaspoon nutmeg, finely grated
- 1/2 teaspoon cloves
- 1/2 teaspoon green cardamom
- 3 garlic cloves, smashed
- 3 star anise
- 3 bay leaves
- 3 strips orange zest
- 1 scallion, roughly chopped
- 2in piece ginger, roughly chopped
- Combine all ingredients in a saucepan and bring to simmer
- Reduce heat to low and simmer for 30 minutes
- Allow to cool completely
- Strain out solids and discard
- Combine all ingredients in a mason jar
- Seal and submerge in water bath at 145 for 1-3hrs, tasting each hour
