Cut lamb into small 1/8 in pieces. With your hands, mix with salt and cornstarch.
Set wok over high heat and add oil. When oil is hot, add scallion, ginger, and garlic. Stir fry for 30 seconds. Immediately add lamb and stir fry for 5 minute unles nice browning exterior.
Add cumin and chile powder. Stir fry for 30 seconds.
Turn the heat off, add cumin, chile powder, onions, pepper, and MSG. Stir to combine.
Serve on noodles, rice, bun, or daily bread with pickled onions and cilantro.
