Ingredients
Broth
3 cups
broth
Tare
25g
miso paste
10g
soy sauce
5g
dry sake
3g
sugar
Toppings

eggs

scallions
1 cup
mushrooms
(oyster, shiitake, maitake, etc)

baby bokchoy
2-3
carrots
2 sheets of
seaweed
1/2 cup
kimchi
1/2 cup
cilantro
Noodles
2
nests of ramen noodles
Instructions
Tare
Combine all ingredients in a small bowl and mix until smooth
Set aside
Toppings
Eggs
Bring a small pot of water to a boil
Add eggs and boil for 6 minutes
Remove eggs and place in an ice bath
Peel eggs when cool enough to handle
Set aside
Scallions
Slice scallions into thin rounds
Set aside
Mushrooms
Slice mushrooms into thin strips
Pan fry in a small amount of butter/oil until browned
Set aside
Baby Bok Choy
Slice baby bok choy in half lengthwise
Pan fry in a small amount of butter/oil
Add a splash of water and cover to steam until tender, 2min perhaps
Set aside
Noodles
Bring a large pot of water to a boil
Add noodles and cook until tender, 2-3min
Drain and rinse with cold water
Set aside
Serving
Warm serving bowl by first pouring in hot water from the kettle and letting it sit for a few minutes
Pour out the water
Add the tare and sliced scallions to the bowl
Add 1 1/2 cups of broth to the bowl
Add the noodles to the bowl
Add the toppings to the bowl
Serve immediately
