Tare

  • Combine all ingredients in a small bowl and mix until smooth
  • Set aside

Toppings

Eggs

  • Bring a small pot of water to a boil
  • Add eggs and boil for 6 minutes
  • Remove eggs and place in an ice bath
  • Peel eggs when cool enough to handle
  • Set aside

Scallions

  • Slice scallions into thin rounds
  • Set aside

Mushrooms

  • Slice mushrooms into thin strips
  • Pan fry in a small amount of butter/oil until browned
  • Set aside

Baby Bok Choy

  • Slice baby bok choy in half lengthwise
  • Pan fry in a small amount of butter/oil
  • Add a splash of water and cover to steam until tender, 2min perhaps
  • Set aside

Noodles

  • Bring a large pot of water to a boil
  • Add noodles and cook until tender, 2-3min
  • Drain and rinse with cold water
  • Set aside

Serving

  • Warm serving bowl by first pouring in hot water from the kettle and letting it sit for a few minutes
  • Pour out the water
  • Add the tare and sliced scallions to the bowl
  • Add 1 1/2 cups of broth to the bowl
  • Add the noodles to the bowl
  • Add the toppings to the bowl
  • Serve immediately
