- Melt chocolate chips and peanut butter in a double-boiler
- 1 cup chocolate chips
- 1 cup peanut butter
- Add 3 cups of Rice Chex to a large bowl, pour half of the chocolate mixture over the cereal, and mix
- Repeat with the 3 more cups of cereal and rest of chocolate mixture
- If there is too much chocolate pooling at the bottom, add 1/4 cup more cereal (careful, we want some chocolate clumps to happen on the cereal)
- Place the fridge to cool for ~15 minutes (the goal is to bring it to room temp so that it doenst absorb all the powdered sugar)
- Add 1 cup powdered sugar and mix
- Place back in the fridge for ~15 more minutes
- Add more powder sugar, 1/4 cup at a time until the cereal is coated to your liking
- Serve immediately/store in an airtight container
