This recipe is inspired by Serious Eats recipe for Jerk Chicken.

Ingredients

• 6 whole scotch bonnet peppers
• 6 scallions, roughly chopped
• 2in knob of ginger, roughly chopped
• 6 garlic cloves
• 2 tablespoons fresh thyme leaves
• 1 tablespoon allspice, ground
• 1 tablespoon nutmeg, freshly grated
• 2 tablespoons brown sugar
• 1/2 cup soy sauce
• 2 tablespoons lime zest and 1/4 cup juice, ~4 limes
• 1/4 cup olive oil
• Kosher salt and freshly ground black pepper
• ~3lbs boneless, skinless chicken thighs

Instructions

• Combine everyting (not the chicken) in a blender/processor and blend until rough purée
• Put chicken in gallon-sized ziplock bags and pour marinade over it
• Marinate for 8-24 hours
• Cook over a fire (if possible)
