Improve "Total Blocking Time" -> Lighthouse performance from ~70 -> ~90

• reduce the size of included react-syntax-highlighter via Light Build instructions
• only include react-syntax-highlighter on pages that need it, doing this with useState
• switch from sentry to logtail for logging, lower level but also lower bundle size
