Beet Shrub

  • Add all ingredients into a mason jar
  • Sous vide at 150°F for 2 hours
  • Strain out the solids

Cocktail Recipe

Instructions

  • Combine mezcal, St. Germain, beet shrub and stir together
  • In a separate container, pour in the goat milk
  • Pour the mezcal mixture into the goat milk (the mix must be poured into the milk!)
  • Let curdle for 2 hours
  • Strain out the solids using cheesecloth (it will take some time)

To serve:
