Common Types of Syrups
(I'll prep these at home and bring them for everyone to taste)
- simple 1:1
- demerara 2:1
- simple + gum
- agave (store-bought)
- honey syrup (honey + water + little bit of heat)
- maple
Making Syrups
- kitchen scale
- hot water
- stove heat only when you have to, slower is better, stirring constantly to ensure no part over cooks/burns
- sous vide for precise repeatability
